Elote – Corn on the Cob

Ingredients
- Mexican:
- 1 corn Cob, cooked
- 1 tbsp Mayo
- 1 tsp Chipotle
- pinch Salt
- 1 tbsp Crumbled Cotija
- 1 lime, zested & juiced
- 2 tsp Chili powder
Elote is a traditional mexican street food featuring a grilled corn on the cob, slathered with mayo and then dusted with chili powder. For a recent music festival, we took this dish and upgraded it. We featured 2 styles at our booth – Northern Nights Eats – 1 traditional mexican, with the recipe on the right, and one Asian style (recipe below). Both of these are surefire hits at any bbq or dinner party! Really easy, and really inexpensive! You can cut the cob size down for desired serving size.
1 corn cob, shucked and grilled (or cooked any way)
1 tbsp Miso Paste
1 tbsp Butter
1 tbsp Furikake (Japanese Rice Seasoning, available in almost any super market)
1 tsp Togarashi (Japanese Chili Powder. Substitute 1/4 tsp cayenne pepper if unavailable)
