Smashed Fingerling Potatoes

Ingredients
- 4 lbs Fingerling Potatoes
- 3 tbsp Butter
- 1-2 tbsp Salt
- 2 tbsp Chives
- Water for Boiling
Bring a large pot of water to a boil. Add in salt and potatoes.
Boil for 20-25 minutes. Strain potatoes and transfer to a large cookie sheet or foil pan. Gently smash each potato with a fork, just popping it open. Generously cover with chives and butter.
