Thai Brined Pork Loin

This recipe was very fun to create. The prompt very simple – Thai Pork. Lots of different directions to go with on that idea. So, I took it down to a more simple direction, as opposed to the more obvious Curries. I used classic Thai flavors in a very potent brine for a pork loin. The result was outstanding, and now a staple on my menus. The aromatics from the lemongrass, garlic, chili and lime helped to flavor the pork so much that a dipping sauce wasn’t needed! Plated and paired with rice, a simple slaw, and butter lettuce leafs to facilitate eating with your hands.
